Ingredients
- paper muffin wraps
- all purpose flour 1 1/3 C
- buckwheat flour 3/4C
- sugar 1/4 c
- baking powder 1 1/2 tsp
- cinnamon 1 tsp
- baking soda 1/2 tsp
- salt 1/2 tsp
- eggs 2
- canned pumpkin mix 1 C
- milk 1/2 C
- oil 2 TB
- orange peel 1/2 tsp
- orange juice 1/4 c
Preparation
Step 1
place muffin wraps in pan
spray inside wraps
combine flours, sugar, baking powder, cinnamon, baking soda, salt
make a well in the center - set aside
in another bowl combine eggs, pumpkin milk, orange peel, orange juice,
add wet to dry
stir just until moist
batter should be lumpy
spoon batter into prepared muffin cups about 3/4 full
sprinkle cinnamon sugar mix over each
bake at 400 for 20 min or until light brown
serve hot with butter or spread
