Fennel, Apple and Walnut Salad with Citrus Vinaigrette

Ingredients

  • Apple cider vinegar dressing
  • 2 tbsp orange juice
  • 2 tbsp honey
  • 1 clove garlic, minced
  • 4 cups curly endive, torn
  • 3 cups thinly sliced fennel bulbs
  • 1 cup cubed apple or pear
  • 1.2 cup coarsely chopped walnuts, toasted
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled blue cheese, feta or goat cheese
  • Sea salt
  • Freshly ground black pepper

Preparation

Step 1

For the dressing, mix cider vinegar, oil, mustard, orange juice, honey and garlic. Cover and chill.

In a large bowl, mix the endive, fennel, apple, walnuts, red onion and cheese. Drizzle with the dressing, to coat. Season with salt and pepper. Transfer to a serving platter.
