Barbecue Shrimp Pizza

Ingredients
- 3/4 cup barbecue sauce
- 1 (10-oz.) Italian cheese-flavored thin pizza crust
- 1/2 pound fresh OR frozen cooked and peeled shrimp, coarsely chopped
- 1/3 cup sliced red onion
- 3 ounces part-skim Mozzarella cheese, shredded
- 2 tablespoons chopped cilantro
Preparation
Step 1
Preheat oven to 450 degrees. Spread barbecue sauce evenly over pizza crust; arrange shrimp and onion on top; sprinkle evenly with cheese. Place pizza directly on oven rack and bake for 12 minutes or until lightly browned and bubbly. Sprinkle cilantro over pizza before serving.
SERVING SUGGESTION: A big spinach salad.
VEGETARIAN: Use non-breaded faux chicken patties cut to the approximate size of shrimp.
KOSHER: Use cooked boneless skinless chicken breast meat cut to the approximate size of shrimp.
GLUTEN FREE: You will probably need to go ahead and make your own pizza crust for this recipe. Be sure to also use gluten free barbecue sauce.
