Ingredients
- 1/4 cup honey
- 1 tablespoon chopped thyme leaves
- 1 tablespoon water
- Salt
- Pepper
- 1 1/4 pounds skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
- 8 small apricots, halved and pitted
- 8 large wooden skewers, soaked in water for 30 minutes
- Extra-virgin olive oil, for brushing
Preparation
Step 1
In a small bowl, whisk the honey with the thyme and water. Season with salt and pepper.
Light a grill or preheat a grill pan. Thread the chicken and apricots onto the skewers. Brush the kebabs with olive oil and season with salt and pepper. Grill over moderate heat, turning occasionally, until the chicken is just cooked through, about 10 minutes. Brush the hot kebabs with the honey-thyme mixture and serve.
