- 1 1/2 C softened butter
- 1 1/2 C sugar
- 2 egg yolks
- 1/2 t salt
- 2 t vanilla
- 2 1/2 C flour
- 1 1/2 C finely crushed plain potato chips (measure after crushing)
- 1 1/2 C finely chopped pecans
- 1/2 t finely grated lemon zest
- 1/3 C sugar for dipping
- Approximately 5 dozen pecan halves for decoration
In large bowl beat butter, sugar, egg yolks, salt and vanilla until fluffy. Add flour, crushed potato chips, pecans and lemon zest. Mix well.
Form 1" balls and place on ungreased cookie sheet.
Place sugar in small bowl. Spray bottom of glass with Pam. Dip in sugar and flatten each ball. Place pecan half in center of each cookie and press slightly.
Bake at 350 degrees for 10-12 minutes.
