Ingredients
- 1 C butter
- 1 C milk chocolate chips
- 2 C sugar
- 2 eggs
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 2 t vanilla
- 3 C flour
- Frosting
- 1/2 C firmly packed brown sugar
- 3/4 C tightly packed coconut
- 1/2 C chopped pecans
- 1/4 C chilled butter
- 2 beaten egg yolks
Preparation
Step 1
Milt butter and chocolate chips for 2 minutes on high in microwave. Stir till smooth.
In another bowl, mix sugar and eggs. Add baking powder, baking soda, salt and vanilla. Stir the melted chocolate until it's fairly warm, but no longer hot. Add to mixing bowl. Add flour and mix well. Dough will be stiff and a bit crumbly. Cover dough and set aside while you make frosting.
Combine sugar and coconut in food processor. Mix with steel blade until coconut is in small pieces. Add chopped pecans. Cut the butter into 4 chunks and add. Process until butter is in small bits.
Separate eggs. Add yolks and proess until thoroughly incorporated.
Preheat oven to 350 degrees. Chill frosting while oven is heating.
Pat the cookie dough into 1" balls. Place on greased cookie sheet. Press down in the center of each ball with thumb to make a deep indentation. Pat the frosting into 1/2" balls. Place into indentation.
Bake at 350 for 10-12 minutes. Let cool on sheet for 2 minutes and move to wire rack.
