Ingredients

  • ¾

    pound orzo, cooked al dente

  • 1

    large cucumber, seeded and chopped

  • 3

    green onions, thinly sliced

  • 1

    pint grape tomatoes, halfed

  • ¼

    cup chopped fresh dill, plus extra to garnish

  • ¼

    cup white wine vinegar

  • 3

    tbsp dijon mustard

  • ½

    cup olive oil

  • ¾

    pound crumbled feta cheese

  • Salt and Pepper

  • For a heartier salad, add 16 medium shrimp

Directions

Combine orzo, cucumber, onions and tomatoes. Place dill, vinegar and mustard in a blender and blend until smooth. With the blender running, slowly add the olive oil until blended. Season with salt and pepper. Pour the vinaigrette over the pasta mixture and mix well. Gently fold in the feta. If adding shrimp, brush the shrimp with olive oil and grill for 2 minutes on each side or until done.
