Ingredients

  • 1 1/4

    cups flour

  • 1/2

    cup cornstarch

  • 1/3

    cup powdered sugar

  • 3/4

    cups softened butter

  • 1

    teaspoon grated lemon peel

  • 1

    tablespoon lemon juice

  • Frosting:

  • 3/4

    cup powdered sugar

  • 1/4

    cup softened butter

  • 1

    teaspoon grated lemon peel

  • 1

    teaspoon lemon juice

Directions

In large mixing bowl, combine all cookie ingredients. Beat at low speed until well mixed (2-3 minutes) Divide dough into half. Shape each half into 8 x 1 inch roll. Wrap in plastic wrap and refrigerate until firm (1 - 2 hours). Heat oven to 350. With sharp knife, cut each half into 1/4 inch slices. Place 2 inches apart on bookie sheets. Bake 8 - 12 minutes or until set. (Cookies will not brown.) Cool completely. In small mixing bowl, combine frosting ingredients and beat at medium speed until fluffy (1 - 2 minutes). Frost cooled cookies.
