Ingredients

  • 16

    even sized open cup mushrooms, stalks cut level.

  • 3

    tbs. EVOO

  • ¼

    cup unsalted butter, softened

  • 3

    finely chopped garlic cloves

  • 2

    tbs. fresh, chopped thyme

  • 1

    &½ tbs. lemon juice

  • ¼

    cup breadcrumbs

  • salt and pepper to taste

Directions

• Lightly fry the mushrooms, cap side down, for 20 seconds in hot oil. • Arrange the mushrooms in a shallow foil pan, caps down. • Mix the butter, garlic, thyme lemon juice and salt/pepper. • Spoon the mixture over each mushroom. • Lightly press the breadcrumbs on the top. • Bake for 10 minutes at 400 degrees.
