Ingredients
- 2 cups Kashi cereal (your choice, but I like the Kashi Go lean)
- 1/2 cup wheat germ
- 1/4 cup oatmeal (uncooked, old-fashioned or quick cooking; not steel cut)
- 3/4 cup whole wheat pastry flour (or reg. whole wheat flour, but ww pastry flour is best)
- 3/4 cup dried blueberries
- 1/4 cup dark brown sugar or Sucanet (evaporated sugar cane juice)
- 1/2 cup honey (or blue agave syrup)
- 1/3 cup vegetable oil (I used cold pressed safflower)
- 1/3 cup egg substitute (like EggBeaters)
Preparation
Step 1
Lightly grease a 9 x 13 pan. Preheat oven to 350 degrees.
In a large mixing bowl, mix together the first six ingredients. Make a well in the middle of those dry ingredients and add the remaining ingredients, mixing well.
With clean hands, press this mixture into your pan. Bake for 25 to 30 minutes, but check it! You don’t want it burning. Let sit for 5 minutes before cutting into 24 bars.
