Pineapple-Chicken

Ingredients

  • 4-8 chicken breasts
  • 1 lg onion
  • S & P
  • 1/8-1/4 LB butter
  • 1 TBL cornstarch
  • 1 - #2can crushed pineapple - drained (save juice)
  • chicken broth
  • sliced almonds
  • sliced pineapple

Preparation

Step 1

barley cover chicken w/ water
add onion, S & P
steam until tender

SAUCE:
melt without browning - butter
add cornstarch
when bubbling add crushed pineapple

this makes a thick sauce
if not heavy & thick add more cornstarch diluted in little pineapple juice

add chicken broth to this until good consistency

put in chicken - sliced or chunks

place in pineapple sauce until ready to serve

garnish w/ almonds & pineapple
