cookie - Flourless Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups cashew butter (*see notes*)
  • 1/4 cup + 1 T maple syrup
  • 1 tsp ground vanilla beans or vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup dark chocolate chips

Preparation

Step 1

Preheat oven to 350.
In a food processor, combine all the ingredients, except for the chocolate chips.
Pulse until everything is mixed.
Fold in the chocolate chips.
Drop cookies onto a lined baking sheet. I used a cookie scoop for this.
Bake for 10 minutes.
Let cool completely before removing from the cookie sheet.
Store in an airtight container for up to 2 weeks.
You can also freeze them for longer.
