Chocolate Candy Cane Cookies

Ingredients

  • 4 squares unsweetened baking chocolate
  • 1 1/4 C chilled butter
  • 2 C sugar
  • 2 beaten eggs
  • 2 t baking soda
  • 1/2 t salt
  • 1/3 C white Karo corn syrup
  • 2 T water
  • 1 T vanilla
  • 4 C packed flour
  • TOPPING
  • 1/4 C sugar
  • 1/4 C finely crushed mint candy canes

Preparation

Step 1

Melt butter and chocolate together and set aside. (mix thoroughly)In large bowl combine sugar and eggs. Beat well. Add baking soda and salt.

Mix in corn syrup, water and vanilla. Add 1/2 of flour to bowl. Then add remaining flour and mix well. Spray cookie sheets with Pam.

Crush candy canes. Measure out 1/4 cup of candy canes and put in a small bowl. Add 1/4 cup sugar. Mix well.

Roll dough into 1 inch balls. Dough will be sticky so put in fridge between batches. Roll balls in topping. Place on cookie sheet. Flatten slightly.

Bake 8 - 10 minutes. Wait only 1 minutes then remove from sheet or cookies will stick. 350 degrees
