Ingredients
- 10 skinned chicken thighs (~3 lbs)
- 1/2 t salt
- 1/2 t pepper
- Orange-Jalapeno Glaze
- 2 c orange juice
- 3 med jalapeno peppers, seeded and finely chopped
- 4 garlic cloves, minced
- 3 T grated orange rind
- 1 T olive oil
- 3 T maple syrup
- 1 t salt
- 1/2 t ground ginger
- 1/2 t pepper
Preparation
Step 1
1. Stir all Orange-Jalapeno ingredients in med saucepan; bring to a boil over med high heat. Reduce heat to medium, and cook, stirring often, 15 mins or until reduced by half.
2. Remove and reserve 1 cup of glaze.
3. Rinse chicken and pat dry. Sprinkle evenly w/ salt and pepper. Brush chicken lightly with remaining glaze.
4. Grill over med high heat (350-400) 8-10 each side or until done, basting each side with reserved glaze during last few mins.
