Ingredients
- 1/2 c butter or margarine, softened
- 1/4 c vegetable shortening
- 3/4 c granulated sugar
- 1 large egg
- 2 tsp vanilla
- 2 c all purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt

Preparation
Step 1
Cream butter and shortening in large bowl.
Add sugar gradually. Beat until light and fluffy, about 5 minutes.
Add egg and vanilla; mix well.
Combine flour, baking powder and salt in separate bowl. Add to butter mixture in 3 additions; mixing well after each addition. Dough will be stiff.
Fill cookie press. Press cookies on ungreased, uncoated cookie sheets.
Bake at 375° for 10-12 minutes or until lightly brown around the edges.
This recipe may be varied in flavor and color by using different spices and/or extracts, or by adding food coloring to the dough in Step 3. The following variations will give you a good start.
Chocolate Almond: Decrease vanilla to 1 tsp; add 1 tsp almond extract and 3 T cocoa.
Egg Nog: Add ½ tsp ground nutmeg to flour.
Orange: Substitute 2 tsp orange extract for the vanilla; add 1 T finely grated orange peel.
Raspberry Nut: Substitute 1 ½ tsp coconut extract for the vanilla; 2 T seedless red raspberry jam. Sprinkle with chopped nuts before baking.
