Ingredients
- 6 Tbsp yellow cornmeal
- 3 Tbsp pre-shredded Parmesan
- 1/2 tsp salt, divided
- 1/2 tsp pepper
- 1 large egg white
- 1 1/2 lbs chicken breast tenders
- Cooking spray
- Honey mustard or low fat ranch (not counted in points)
Preparation
Step 1
1. Preheat oven to 450 degrees.
2. Combine cornmeal, cheese, 1/4 tsp salt and pepper in a shallow dish. Place egg white in another shallow dish.
3. Sprinkle chicken with remaining 1/4 tsp salt; dip chicken tenders in egg white and then dredge in cornmeal mixture, pressing firmly to coat. Shake off excess. Place chicken on a wire rack and let stand 10 min. While chicken stands, place a jelly roll pan in oven to heat.
4. Coat chicken well with cooking spray. Remove hot pan from oven; coat with cooking spray. Place chicken on pan in a single layer. Bake at 450 degrees for 20-25 min or until chicken is done.
