Red Cabbage and Apples

Ingredients

  • 1 (2 1/2 lbs) red cabbage, shredded
  • 1 tbs olive oil
  • 1 medium onion, diced
  • 2 Granny Smith apples, peeled, cored and sliced
  • 1/2 water or apple juice
  • 3 tbs red wine vinegar
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper

Preparation

Step 1

1-Heat oil in pressure cooker on brown setting. Saute onion until soft about 5 minutes.

2-Add apples and stir in apple juice and vinegar. Add cabbage to the pressure cooker. When it wilts add more.

3-Lock lid, cook on high 2-4 minutes. Release pressure.

4-Remove from cooker, season with salt & pepper. Serve
