Malibu Chicken Bundles

Ingredients

  • SAUCE:
  • 4 boneless skinless chicken breast halves
  • 1/2 dijon mustard, divided
  • 4 thin slices deli ham
  • 4 slices swiss cheese
  • 1 can (8-oz) unsweetened crushed pineapple, well drained
  • 1-1/2 C panko bread crumbs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 can (10-3/4oz) cream of chicken soup, undiluted
  • 1/4 C sour cream
  • 1/8 tsp dried tarragon

Preparation

Step 1

flatten chicken breasts to 1/4" thickness
spread 1 TBL mustard over each
layer w/ ham, cheese & pineapple
fold chicken over pineapple
secure w/ toothpicks
brush bundles w/ remaining mustard

in shallow bowl, combine bread crumbs, S & P
roll bundles in bread crumb mixture
place in 11"X7" baking dish coated w/ cooking spray
bake, uncovered @ 350 for 45-50 min
discard toothpicks

meanwhile in sm. saucepan, combine sauce ingredients
cook, stirring occasionally, until heated through
serve w/ chicken
