Herbed Roquefort Biscuits

Found this in my Aunt's recipe collection from an old 1984 Southern Living magazine. A fancy way to spice up a basic biscuit recipe.

Ingredients

  • 3

    oz. Roquefort cheese, crumbled

  • 2

    Tbsp. minced green onion tops

  • 1

    tsp. dried whole basil

  • ½

    tsp. dried whole thyme

  • 2

    c. all-purpose flour

  • 1

    tbsp. baking powder

  • ½

    tsp. salt

  • ¼

    tsp. baking soda

  • ¼

    c. plus 2 tbsp. cold unsalted butter, cut into pieces

  • ¾

    c. buttermilk

Directions

Combine first 4 ingredients in a small bowl; set aside. Combine flour, baking powder, salt, and soda in a medium bowl. Cut in cheese mixture and butter with a pastry blender till mixture resembles course meal; stir in buttermilk. Turn dough out onto a floured surface, and knead lightly 7-8 times. Roll dough to 1/2" thickness; cut with a 2 1/2" biscuit cutter. Place biscuits on a lightly greased baking sheet. Bake at 450 degree for 13-15 min. till golden brown.
