Ingredients

  • Topping
  • 3 T flour
  • 2 T brown sugar
  • 1/2 tsp cinnamon
  • 1 T cold margarine
  • Muffins
  • 1 1/4 C flour
  • 1 T baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeng
  • 1/4 tsp salt
  • 2 C All-Bran cereal
  • 1 C skim milk
  • 1/3 C brown sugar
  • 1/3 C unsweetened applesauce
  • 2 egg whites
  • 1/4 C oil
  • 1/2 tsp vanilla
  • 1/2 C golden raisins (opt)

Preparation

Step 1

- Combine topping ingredients, cutting margarine in with pastry blender until it resembles coarse crumbs
- Stir together first 5 mufin ingredients
- Combine cereal, milk, applesauce, brown sugar; let stand until cereal softened - 4 - 5 min.; add egg white, oil, vanilla, raisins; add flour mixture stirring only until combined
- Fill sprayed cups, sprinkle with topping and bake at 400 for 20 min until golden brown
