Sour Cream Peach Pie

Ingredients

  • TOPPING:
  • pastry for single-crush pie (9")
  • 4 C sliced peeled peaches
  • 2 TBL peach preserves
  • 1 C sugar
  • 1 C (8oz) sour cream
  • 3 egg yolks
  • 1/4 C flour
  • 1 tsp vanilla extract
  • 1/2 C flour1/2 C packed brown sugar
  • 1/4 C sugar
  • 3 TBL chopped pecans
  • 1 tsp grd. cinnamon
  • 1/4 C cold butter

Preparation

Step 1

line 9" pie plate w/ patry
trim & flute edges

in lg. bowl, combine peaches & preserves
transfer to pastry
in sm. bowl whisk sugar, sour cream, egg yol=lks, flour & vanilla
pour over peaches

bake 425 for 30 min
meanwhile in sm. bowl combine flour sugars, pecans & cinnamon
cut in butter until crumbly
sprinkle over pie
cover edges of crust to prevent overbrowning

bake for 15-20 min or until knife inserted in center comes out clean & topping is golden brown

cool on wire rack for 1 hr.
store in frig.
