Ingredients
- 2-1/4 CUP OAT-BRAN
- 1/2 CUP RAISINS
- 1 MEDIUM CHOPPED APPLE
- 2 EGG WHITES OR 1 EGG SUBSTITUTE
- 2 CUPS SUGAR FREE APPLE JUICE
- 1-1/4 SUGAR FREE APPLE SAUCE
- 1/2 CUP OF CORN SYRUP OR HONEY
- 2 TEASPOONS CINNAMON
- 1 TABLESPOON BAKING POWDER
Preparation
Step 1
PREHEAT OVEN TO 400 DEGREES. IN A LARGE BOWL, MIX WET INGREDIENTS AND BLEND WITH DRY INGREDIENTS. MIX BY HAND. LINE MUFFIN PAN WITH PAPER BAKING CUPS AND FILL WITH BATTER DIVIDED EQUALLY. BAKE 13 TO 15 MINUTES. TEST WITH TOOTHPICK.
MAKES 12 MUFFINS. STORE IN 1 GALLON SIZE SEALED STORAGE BAG AND KEEP IN REFRIGERATOR TO RETAIN MOISTURE.
EACH MUFFIN IS ABOUT 135 CALORIES.
