Ingredients
- 1 lb turkey Italian sausage, hot or mild, cut into small pieces
- 2 cups broccoli flowerets and/or 1 stalk of swiss chard, or cauliflower
- 2 1/2 cups water
- 1/2 tsp dried basil leaves
- 1/2 tsp fennel seed, crushed
- 1/4 tsp pepper
- 1 20-ounce can of whole Italian-style, crushed, or diced tomatoes
- 1 can (10 1/2 oz) beef broth or use bouillion cube and water
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 1 cup (3 oz) uncooked pasta or small amount of quinoa, (optional)

Preparation
Step 1
Cook sausage in a 4 to 6 qt pan over medium-high heat, stirring occasionally, until brown: drain. Stir in remaining ingredients, breaking up tomatoes. Heat to boiling: reduce heat to medium-low. Cover and cook about 15 minutes, or until pasta or quinoa is tender, stirring occasionally.
