Beef with Pepper Sauce

Ingredients
- 1 pound boneless beef top sirloin steak, about 3/4" thick
- 3 tablespoons ketchup
- 3 tablespoons water
- 3/4 teaspoon low sodium soy sauce
- Water/oil mixture
- 1 small bell pepper (any color), seeded, deribbed and cut into thin strips
- 1 small onion, thinly sliced
- Black pepper, to taste

COOKING INSTRUCTIONS:
Trim any visible fat from beef. Place beef between two pieces of plastic wrap or waxed paper; pound with the flat side of a meat mallet or rolling pin to tenderize. Cut into 4 serving pieces. In a small bowl, whisk together ketchup, water and soy sauce; set aside. Spray a large skillet with a tight-fitting lid with water/oil mixture over medium-high heat; add beef and cook for 3 minutes, turning once. Add bell pepper and onion. Stir in ketchup mixture. Reduce heat to low; cover and simmer for 12 minutes or just until steak is tender. Remove steak from skillet and keep warm. Stir pepper into skillet; bring sauce to a boil and cook for 2 minutes, stirring frequently, until slightly thickened. Serve sauce over beef.
SERVING SUGGESTION: Brown rice and steamed broccoli.
GLUTEN FREE: Make sure soy sauce is gluten free.
