Chicken Tortilla Bake

Ingredients
- 4 (4-oz.) boneless skinless chicken breast halves
- Non-aerosol cooking spray
- 1/2 cup salsa
- 1/4 cup low fat sour cream
- 1/2 cup crushed baked tortilla chips
- 1/2 cup shredded low fat Cheddar cheese
Preparation
Step 1
Preheat oven to 400 degrees. Place chicken in a baking dish coated with cooking spray. With a sharp knife, cut 3 slits on the top of each chicken breast half; top each evenly with salsa, sour cream and tortilla chips. Bake for 20 minutes. Remove from oven and sprinkle with cheese. Return to oven and bake for 10 minutes or until chicken is cooked through and cheese has nicely melted.
LC SERVING SUGGESTION: Serve a big green salad on the side.
SERVING SUGGESTION: Add warmed black beans (provide additional sour cream and salsa for the table as a topping, if desired).
KOSHER: Use cultured soy and use soy cheese.
GLUTEN FREE: Use gluten free tortilla chips and make sure sour cream is gluten free.
