Potato Salad with Scallions and Dill

Ingredients

  • 2 1/2 lb small new potatoes
  • Kosher salt and pepper
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp prepared horseradish
  • 2 scallions, thinly sliced
  • 1/2 cup fresh dill sprigs
  • 1/2 cup fresh flat leaf parsley, roughly chopped

Preparation

Step 1

Place the potatoes in a large pot. Add enough cold water to cover and bring to a boil. Add 1 tsp salt, reduce heat and simmer until tender, 15-18 mins. Drain and run under cold water to cool. Cut the potatoes in half (or quarter if large)

Meanwhile, in a large bowl, whisk together the oil, vinegar, horseradish, salt and pepper. Add the potatoes to the bowl and toss to coat. Fold in the scallions, dill and parsley.
