- 1 1/2 C melted butter
- 2 C sugar
- 3/4 C mashed very ripe bananas (2 medium)
- 4 t baking soda
- 1 t salt
- 2 beaten eggs
- 4 C flour
- 2 C finely chopped walnuts or pecans
- 1/2 C sugar for later
Add sugar, baking soda, salt and eggs to melted butter. Add mashed bananas. Mix thoroughly add flour and nuts. Cover and refrigerate 4 hours or overnight.
Roll chilled doughinto walnut size balls. Dough will be very sticky. Roll in sugar. Place on greased cookie sheet. Slatten slightly. Bake 10-12 minutes at 350 degrees. Cool on sheets for 2 minutes.
These freeze well.
