Ingredients

  • 1 C melted butter
  • 3 eggs
  • 1 1/2 C sugar
  • 2 t cream of tartar
  • 1 t baking soda
  • 1/2 t salt
  • 1 t coconut extract
  • 1 1/2 C flour
  • 2 C instant mashed potato flakes
  • 1 C coconut flakes - firmly packed
  • 3/4 C finely chopped pecans or walnuts
  • 1/2 C sugar for later

Preparation

Step 1

Crack eggs and whip for a minute. Pour in sugar. Add cream of tartar, baking soda, salt and coconut extract. Mix well. Stir in melted butter. Add flour. Add potato flakes. Add coconut. Stir in nuts. Mix well.

Cover tightly and chill for at least 4 hours or overnight.

Bake at 350 degrees.

Form 1 inch balls and roll in sugar. Place on PAM sprayed cookie sheet. Flatten slightly. Bake for 10-12 minutes Cool 2 minutes on cookie sheet.

To make sandwich cookies, use chocolate frosting or raspberry jam.
