Gingery Chicken and Pot Sticker Soup

Ingredients

  • 8 cups low sodium chicken broth
  • 1/2 " piece of ginger
  • 1 jalapeno, thinly sliced
  • 16 oz. package frozen pot stickers
  • 4 medium carrots, thinly sliced
  • 8 oz. shiitake or white mushrooms, sliced

Preparation

Step 1

In a large saucepan, bring broth, ginger and jalapeno to a boil. Add the pot stickers, carrots and simmer until carrots are just tender, 8-10 mins. Add mushrooms and simmer until heated through, about 2 mins.
