Ingredients
- 6 large eggs
- 1 1/2 cups whole milk
- 3/4 cup crumbled feta cheese
- salt and pepper
- 4 TB unsalted butter
- 1 onion, chopped fine
- 1 (6oz) bag baby spinach, chopped
- 5 slices hearty white sandwich bread cut into 1" squares
Preparation
Step 1
1. Heat oven to 400. Whisk eggs,milk,half of feta, 1/4 tsp salt and 1/4 tsp pepper in large bowl.
2. Melt 2 TB butter in large ovensafe nonstick skillet over medium heat. Cook onion until softened. Add spinach and 1/4 tsp salt, cook until wilted. Transfer to bowl.
3. Melt remaining butter in empty pan. Add bread and cook, stirring frequently, until golden brown. Off heat, stir in egg mixture and spinach mixture until combined. Top with remaining cheese and bake until surface is golden brown and edges pull away from sides of pan, about 15 minutes. Serve.
Notes: Would cook well with sausage.
If doubling transfer to casserole dish before baking.
