Step 1

Preheat the oven to 425 with a rack in the center. Heat a heavy ovenproof skillet or saute on the stove for 5 minutes. Add oil to the hot pan and sear well on one side. Turn on fan! Do not move filets. Turn and finish in oven.

RARE: Sear 5 minutes, roast 5 minutes, rest 5 minutes.

MEDIUM-RARE: Sear 5 minutes, roast 7 minutes, rest 5 minutes.

MEDIUM: Sear 5 minutes, roast 9 minutes, rest 5 minutes.
