Savoy Cabbage with Sausage

Ingredients

  • 1 T EVOO
  • 3/4 lb [turkey]-apple link sausages or andouile (a hot spicy choice) cut into 1/2" thick slices
  • 1 c chopped green bell pepper
  • 1 small head savoy cabbage, cut into quarters, cored, & sliced crosswise into 1/4" wide strips (prepare in advance & keep in food storage bag in refrigerator)
  • Salt to taste (optional)
  • 1/2 t freshly ground pepper
  • 1 c low-sodium [turkey or vegetable] broth
  • 1 T chopped flat-leaf parsley

Preparation

Step 1

1. Over med-high heat, in lg pot or Dutch oven, heat oil.
2. Quickly brown sausage.
3. Add bell pepper, cabbage, salt, & pepper.
4. Pour in broth; sprinkle w/parsley.
5. Bring to boil.
6. Reduce heat, cover pot w/lid & simmer until cabbage is crisp-tender, ~ 10 minutes (or to desired tenderness).
7. If desired, garnish w/sprinkle of red pepper flakes.
