- 12 ounces diced cooked chicken
- 2 celery stalks diced
- 20 pecans toasted
- 1 shallot diced
- 2 hard boiled eggs diced
- 1 teaspoon lemon juice
- 3 ounces mayonnaise - (to 4 oz)
- Salt to taste
- Freshly-ground black pepper to taste
Combine chicken, celery, pecans, shallots, eggs, and lemon juice. Fold in mayonnaise.
