Ingredients

  • 3 oz. angel hair pasta
  • 1 tbls extra virgin olive oil
  • 8 Oz. hot Italian link sausage, cut into 2” pieces
  • 1 tbls minced garlic
  • 1 tsp anchovy paste
  • 1/4 tsp red pepper flakes
  • 1/4 cup dry marsala
  • 1 can whole tomatoes (14.5oz)
  • 1 tbls red wine vinegar
  • 1 tsp. sugar
  • 1/4 cup pitted kalamata olives
  • 2 tbls capers
  • 1 tsp dried oregano
  • 8 littleneck clams
  • grated parmesan cheese

Preparation

Step 1

Prepare pasta according to package directions: drain

Heat oil in a sauté pan over medium high heat. Add sausage and sauté until browned, about 5 min. Add garlic, anchovy paste, and pepper flakes; sauté 2 min.

Deglaze pan with Marsala, scraping up browned bits from the bottom of the pan. Add tomatoes, vinegar and sugar. Ring mixture to a boil, simmer 3 minutes. Add olives, capers and oregano, simmer 1 min.

Add clams, cover pan and reduce heat to medium, simmer until clams open, 3-5 minutes. Discard any unopened clams. Divide pasta, sauce and clams between two dishes. Top with grated cheese.

Notes:
Sautéing the garlic and pepper flakes releases their flavors into the olive oil and seasons the sauce

The olives and capers add a salty briny note to the sauce which eliminates the need for added salt

Cover the pan after adding the clams to build up steam to cook them. Discard any unopened clams.
