Balsamic Glazed Grilled Sweet Onions

    lb sweet onions

  • Olive oil for grilling

  • 1

    C balsamic vinegar

  • 1

    T chopped thyme leaves

  • Salt & pepper


Peel & trim onions. Cut crosswise into 1/2" slices. Insert toothpick horizontally halfway into each slice to hold rings together. Prepare grill to med-lo. Brush clean grill grate with paper towel dipped in olive oil. Brush both sides of onions with olive oil & grill, turning every 10 min. until very soft & well browned, @ 35 min. Stack onions on aluminum foil sheet & wrap while making glaze. Pour balsamic vinegar into small saucepan & add thyme & salt & pepper. Boil, uncovered, over med-hi heat until vinegar has reduced to @ 1/4 C & has a syrupy texture, @ 10 min. Let cool briefly and season to taste. Transfer onion slices to serving plate & glaze just before serving.
