Chicken - Breast [SF] 'Satay w'Orange Scented Rice'

Ingredients

  • SATAY SAUCE: SATAY SAUCE:
  • 3- 3/4 cup H2O
  • 2 ea. Zested Oranges
  • 2 cup Jasmine Rice-rinsed
  • 2 Tbs Cooking oil
  • 1- 1/2 lbs Chicken Breast
  • 3 cloves Crushed Garlic
  • 1 med. Sliced Yellow Onion
  • 1 med. Red Pepper-sliced
  • 1 cup Shred3 Carrots
  • 6 Scallions-2" pieces
  • 1 cup Snow Peas
  • 4 Tbs Chunky Peanut Bttr.
  • 3 Tbs Dark Soy
  • 3 Tbs Honey
  • 1 " Ginger Root-minced
  • 1 clove Garlic-crushed
  • 1 tsp Red Pepper Flakes
  • 1/2 ea. Orange-juiced

Preparation

Step 1

1.) Heat H2O w/ Zest to boiling. Add rice, return to boil, stir. Cover pot & reduce heat to simmer. Cook rice until tender, ~ 18 mins. Fluff w/ fork.
2.) Heat Lrg. skillet over High heat. Add Chicken, Garlic & Onion, stir-fry 3 minutes. Add remaining veggies & stir-fry 5 minutes more.
3.) Heat all ingredients for sauce together in small pot over Low heat, stirring sauce until all ingredients are combined.
4.) Transfer stir-fry to a large platter & pour sauce evenly over Chicken & Veggies.
5.) Place Chicken on platter and serve rice as a companion.
