Baked Tilapia with Corn, Tomatoes & Brown Rice

Ingredients
- 1 14 oz can yellow corn, drained
- 1 14 oz can petite diced tomatoes
- 1/2 medium red onion, diced
- 1 tsp diced garlic
- 1 tsp ground cumin
- 1 tsp dried dill weed, divided
- 1/2 tsp salt, divided
- Non stick cooking spray
- 4 tilapia fillets (4 oz each)
- 1/4 tsp ground black pepper
- 3 cups hot cooked brown rice

Preparation
Step 1
Preheat oven to 425 degrees. Combine corn, undrained tomatoes, onion, garlic, cumin, 1/2 tsp dill and 1/4 tsp of salt in a bowl.
Prepare 8 fairly equal pieces of foil, approx 8 inches long. Place about 1/2-3/4 cup of corn mixture in the center of a piece of foil. Spray both sides of a tilapia fillet with non-stick spray and sprinkle with remaining dill, salt, & pepper. Place fillet on corn mixture. Seal with a second piece of foil into a secure packet. Repeat with remaining fillets.
Place packets on baking sheet and bake for 20 minutes or until fish flakes easily with a fork.
Place fish and corn-tomato mixture on a plate with a serving of brown rice. Serve immediately.
