Ultimate Chocolate Chip Cookies

Ingredients

  • 1 c. packed brown sugar (I use a bit less)
  • 3/4 c. granulated sugar (ditto)
  • 1 c. butter, softened (I use 1/2 c. + 1/2 c. shortening)
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/2 c. all purpose flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 12 oz. semisweet chocolate or milk chocolate, coarsely chopped, or baking chips (I sometimes use bittersweet)
  • 1 c. chopped walnuts (I don't use)
  • some finely chopped candied ginger (1 1/2 tsp?) This is optional - or cranberries or almonds or whatever

Preparation

Step 1

Preheat oven to 375.

Beat sugars and butter in large bowl on medium speed until fluffy, about 5 min. Scrape occasionally. Beat in vanilla and eggs.

Mix flour, baking soda and salt in a bowl, and then beat into butter mix on low speed (just till mixed pretty well). Stir in chips and ginger and whatever additions you want to add.

Drop dough by 1/4 cupfuls about 2" apart on ungreased baking sheets. You can flatten slightly with a fork, or leave rounded, but watch edges if you leave rounded and maybe turn heat down a touch at the end.

Bake until edges are light golden, about 11-14 minutes. Let stand on cookie sheets 3-4 minutes before removing to cool completely on wire racks. Makes about 18.
