Ingredients
- 2 Tbs Lime Juice
- 2 tsp Chili Powder
- 1 lb Chicken Breast - cut into 1/2" strips
- 1 sm. Zucchini
- 1 sm. Yellow Squash
- 2 Tbs Veggie Oil
- 2 Tbs Cilantro - chopped
- 1/2 cup Picante Sauce
Preparation
Step 1
1.) Mix Lime Juice & Chili Powder in Med. bowl. Add Chicken. Cover & Refidge for 15 min.. Cut Zucchini & Yellow Squash into thin slices.
2.) Heat Med. skillet over High heat. Add 1 tbsp. of oil. Rotate skillet to coat sides.
3.) Add chicken & marinade. Stir fry until chicken is no longer pink. Remove from skillet. Add remaining 1 tbsp. oil & rotate to coat sides. Add Zucchini & Squash. Stir fry for ~ 4 min. Add Chicken & Picante Sauce & Cilantro. Cook until hot.
