- 3 1/2 c. coarsely chopped pecans
- 2 c. all-purpose flour
- 2/3 c. powdered sugar
- 3/4 c. butter, cubed
- 1/2 c. packed brown sugar
- 1/2 c. honey
- 2/3 c. butter
- 3 Tb. whipping cream
Preparation
Step 1
1. Preheat oven to 350 degrees. Bake pecans in a single layer on a baking sheet 5-7 minutes or until lightly toasted and fragrant. Cool completely on a wire rack (about 15 minutes).
2. Pulse flour, powdered sugar, and 3/4 c. butter in a food processor 7-8 minutes or until mixture resembles coarse meal. Pat mixture on bottom and up sides of a lightly greased 11" tart pan with removable bottom.
3. Bake at 350 degrees for 20 minutes or until edges are lightly browned. Cool completely on a wire rack (15 minutes).
4. Bring brown sugar, honey, 2/3 c. butter, and whipping cream to a boil in 3 qt. saucepan over medium-high heat. Stir in toasted pecans, and spoon hot filling prepared crust.
5. Bake at 350 degrees for 25-30 minutes or until golden and bubbly. Cool completely on a wire rack (about 30 minutes).
Caramel-Pecan Bars: Line a 13x9" pan with heavy-duty aluminum foil, allowing 2-3" to extend over sides. Lightly grease foil. Prepare recipe as directed through Step 2, pressing crumb mixture on bottom and 3/4" up sides of prepared pan. Proceed with recipe as directed. Carefully lift bars from pan, using foil sides as handles, and transfer to a serving tray. Cut into squares.
