Caramel-Pecan Cheesecake Bars

Ingredients

  • Quick Caramel-Pecan Frosting:
  • 2 c. graham cracker crumbs
  • 1/2 c. butter, melted
  • 4 (8 oz.) pkg. cream cheese, softened
  • 3/4 c. sugar
  • 1/4 c. flour
  • 3 large eggs
  • 1 Tb. vanilla
  • 2 (14 oz.) cans sweetened condensed milk
  • 1/2 c. brown sugar
  • 1/2 c. butter
  • 1 tsp. vanilla
  • 1 1/2 c. toasted pecans

Preparation

Step 1

Stir together graham cracker crumbs and butter; press into bottom of lightly greased 13x9 baking pan. Bake at 350 degrees for 8 minutes. Remove from oven and cool on wire rack. Beat cream cheese at medium with mixer till smooth. Combine sugar and flour; gradually add to cream cheese, beating just until blended. Add eggs, 1 at a time, beating until blended after each. Stir in vanilla. Pour mixture over prepared crust, spreading evenly to edges. Bake at 350 degrees for 40 minutes or until set. Remove from oven and cool on a wire rack. Pour warm Quick Caramel-Pecan Frosting over cheesecake, spreading evenly to edges of pan. Cover and chill 8 hours. Cut into bars.
For Frosting: Place 1st 4 ingredients in saucepan, bring toa boil over medium-low heat. Cook, 3-5 minutes or until mixture reaches a pudding-like consistency. Remove from heat, sitr in pecans.
