Peanut Chew Ice Cream

Ingredients

  • Dough:
  • 1/2 cup Margarine, softened
  • 1/2 tsp Baking Soda
  • 1 cup Flour
  • 2/3 cup Oatmeal
  • 1/2 cup Sugar
  • pinch salt
  • Ice Cream
  • 6 Eggs, separated
  • 2/3 cup Sugar, divided
  • 1 tsp Vanilla Extract
  • 8 oz Pareve Whipping Cream
  • Peanut Butter Drizzle
  • 1 cup Crunchy Peanut Butter
  • 2/3 cup Corn Syrup
  • 4 Tbsp Honey

Preparation

Step 1

Preheat oven to 350.
Mix all dough ingredient together by hand or in a mixer. Press into a 9x13 baking pan line with baking paper. Bake for 15 minutes. Cool and set aside.

Ice Cream:
Beat whites until stiff peaks form, gradually adding 1/3 cup of sugar. Set aside. In the same bowl, beat yolks with remaining 1/3 cup sugar until lights and lemony. Add vanilla. Set aside. Beat areve whipping cream in the same bowl until soft peaks form. Combine all 3 mixtures together by hand.

Peanut Butter Drizzle:
Mix all ingredients together in a small saucepan until boiling and well blended. Cool before using.

Spread half of ice cream on cooled crust, spread peanut butter drizzle on top of ice cream. Add another layer of ice cream and top with peanut butter drizzle.
