Roasted Chicken with Orange Glaze

Ingredients
- 1 roasting chicken (7 pounds)
- 1 orange, quartered (divided)
- 1/2 onion, quartered
- 1 1/2 pounds small new, red potatoes, scrubbed
- 1/2 pound carrots, peeled and cut into 3-inch pieces
- 1 teaspoon olive oil
- 3 tablespoons orange marmalade
- 2 tablespoons honey
- 3 tablespoons country Dijon-style mustard
- 3 tablespoons orange liqueur or orange juice
- 1 tablespoon butter

Preparation
Step 1
Preheat oven to 350 degrees.
Stuff cleaned chicken with 2 quarters of orange and onion. Squeeze
remaining orange quarters over chicken and season with salt and
pepper. Place in large roasting pan coated with vegetable oil spray.
Cover loosely with aluminum foil and bake in preheated oven 30
minutes.
Toss potatoes and carrots with oil; arrange around chicken.
Cover loosely with foil. Bake 1 hour.
Heat remaining ingredients in small pan, stirring, until combined.
Pour glaze over chicken. Bake, uncovered, 20 to 30 minutes, or until
chicken and vegetables are done.
