Champagne Vinaigrette

  • 3 tablespoons Champagne vinegar
  • 1 teaspoon minced shallot
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1/2 cup plus 2 tablespoon vegetable oil
  • salt and freshly ground white pepper to taste

Preparation

Step 1

Combine the vinegar, shallot, honey and Dijon mustard in a blender. Add the oil gradually, processing constantly at low speed until thickened. Season with salt and white pepper. Pour into a container with a spout and chill until serving time.
