BONELESS PORK LOIN ROAST (2 – 2½ LBS)
TSP SALT ¼ TSP FRESH PEPPER
tsp dried oregano
tsp dried thyme
cloves garlic, cut into slivers
Tbs Dijon mustard
TB vegetable oil
Pre heat oven to 325. Cut small slits in roast. Mix together S, P, oregano and thyme. Add slivered garlic and coat with spices. Insert garlic into slits. Rub any remaining spice mixture over the surface of the meat. Combine mustard and oil. Brush half of the mixture over the meat. Place meat on a rack in a roasting pan Cook uncovered for one hour. Brush any remaining mustard mixture over the roast. Roast until 170, one hour or more.
