DOLE SWEET KALE KIT****Honey Dijon Salad with Roasted Sweet Potatoes, Pumpkin Seeds and Gruyere Cheese

Ingredients
- 1 large DOLE® Sweet Potato, peeled and chopped into 1-inch cubes (I used 8 oz. PC mini sweet potatoes with the skin on)
- Salt and ground black pepper, to taste
- 1/2 teaspoon ground cinnamon
- 1 pkg. (200 grams) DOLE® Sweet Kale Salade Kit
- 2 tablespoons pumpkin seeds (I used my chili lime seeds)
- 2 tablespoons shredded Gruyere cheese (I used 30 grams Kraft Italiano Light 4 cheese blend)
Preparation
Step 1
Preheat oven to 350°F. Spray shallow baking pan with olive oil cooking spray or toss potatoes with 1 teaspoon olive oil. Spread chopped sweet potato in prepared baking pan. Season with salt and pepper. Sprinkle with cinnamon. Roast 35 minutes or until tender and golden brown. Let cool 10 minutes or several hours until dinner.
Toss salad kit ingredients with roasted sweet potatoes, pumpkin seeds and Gruyere cheese.
