Ingredients
- 1 LB Italian sausage
- 1 red pepper, chopped
- 1 large onion, chopped
- 1 - 8 ounce package fresh mushrooms, sliced
- 2 - 10 ounce packages of frozen spinach, thawed and drained
- 2 cups mozzarella cheese
- 1 tablespoon oil
- Topping
- 1 1/2 cups self rising flour
- 1/2 cup butter, melted
- 1 1/4 cups milk
- 1/2 cup grated parmesan cheese
- 5 eggs
Preparation
Step 1
Brown sausage. Remove from skillet and drain. Add oil to same skillet and cook onion and red pepper for about 5 minutes. Add mushrooms and cook for 3 minutes longer. Return sausage to mixture with spinach. Mix well and pour into buttered 9 x 13 baking dish. Sprinkle mozzarella cheese on top. Mix topping ingredients with a whisk and pour on top of sausage mixture. Bake in a 400 degree oven for 35-40 minutes.
