Ingredients
- 2 med. onions- chopped
- 1 Tbls. oil
- 4 cloves garlic- minced
- 2 (4oz) cans of chopped green chilies
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. cayenne pepper
- 2 (14 1/2oz) cans of chicken broth
- 4 cups cooked chicken- cubed (or shredded)
- 3 (15 1/2oz) cans of great northern beans- rinsed & drained
- 2 cups shredded Monterey jack cheese
- sour cream- optional
- sliced jalapenos- optional
Preparation
Step 1
Sauté onions in oil until transparent. Add garlic, green chilies, cumin, oregano, and cayenne pepper and cook for 3-5 minutes. Add chicken broth, cooked chicken, and northern beans. Bring to a slight boil and then reduce to simmer for about 30 minutes. Ladle into bowel and top with cheese and optional sour cream, and jalapenos right before serving.
For the spicy person in your life- add crushed red peppers with the other spices or jalapeno juice when adding broth.
