LAMB CHOPS WITH HERBS

Ingredients
- 8 loin lamb chops
- 2 Large cloves garlic
- 2 tbs olive oil
- 1 1/2 tsp finely chopeed rosemary
- 1 1/2 tsp fresh thyme leaves
- 1/4 tsp salt 1/4 tsp pepper
- pinch cayenne or splash balsamic vinegar

Step 1
Smash garlic, drizzle with oil, chop/smash to make a paste. Put in bowl with rosemary thyme S&P and remaining oil. If desired, add cayenne or vinegar. Combine, Rub evenly over chops. Cover and refrigerate 30 mins to 4 hours.
Preheat grill pan or cast iron skillet medium high heat. Cook chops 2 minutes per side. Reduce heat to med-low and cook to desired doneness – 3 minutes more for medium rare.
Transfer to cutting board and set aside to rest 5 minutes before serving.
