Weight Watcher's Vegetable Pie

A delicious quiche great for lunch or supper.

Ingredients

  • 2 c thawed mixed vegetables
  • 1/2 c chopped onion
  • 1/2 c chopped green pepper
  • 1 teas salt
  • 1/4 teas pepper
  • 4 oz shredded cheddar cheese
  • 1 c milk
  • 5 T flour
  • 4 eggs

Preparation

Step 1

Combine vegetables and cheese in a sprayed pie plate. Beat together the remaining ingredients in a blender. Pour into the prepared pie plate. Bake at 400 degree oven for 35-40 minutes. Let stand 5 minutes before cutting. Cut into 4 pieces worth 2 Weight Watcher points.
